Breakfast Scones

During the summer of 2020, Jordan and I did a lot of cooking at home. One day, as I was flipping through Joanna Gaines’ Volume 1 of Magnolia Table, I became inspired by her Cheddar Scones. I was reminded of my favorite cafe in Bloomington, Ind: Hopscotch Coffee. Jordan loves the creative drinks there, but I, I love the breakfast sandwiches. As I saw Joanna’s recipe, I thought, I can make this sandwich. I began measuring flour, taking out my rolling pins and inwardly salivating over how great I thought my creation would be. And, it worked! I often find myself in Bloomington, grabbing breakfast at Hopscotch, but when I can’t, my breakfast scones hit the spot.
